The Harshveda range
Three dahi built for three different jobs, ghee pressed from our own milk fat, and a fresh counter that goes out the same day it is made. Dahi is set by the matki — 5 kg and 15 kg — for kitchens that use it by the bowl. Ghee, paneer, khoya and makkhan go to homes and shops just as readily.

Our fullest set — thick enough to hold the spoon upright and lift away in a clean curve. Made from pasteurised toned milk, in the sizes a kitchen actually gets through.

A lighter, cooler set from pasteurised skimmed milk — clean on the palate and easy through a long afternoon, with more protein and calcium per spoon than the full set.

Built for the pace of a working line. Firm enough to portion by the bowl all day without weeping, and priced for the volume a dhaba, halwai or caterer actually gets through.

Grainy, golden and aromatic — cooked down slowly from our own milk fat until it turns the colour of the season. You can smell it before the jar is fully open.

Set fresh each morning and pressed soft — a clean milk flavour that holds its shape in the pan and takes on whatever it is cooked with.

Milk reduced patiently over the flame until it turns grainy and sweet on its own — the foundation of good mithai, and one of the oldest crafts in any dairy.

Soft white butter gathered fresh off the churn. Simple, rich and unmistakably homemade in character — the way it tastes before anything is done to it.
How it is made
Dahi is unforgiving — it records every hour it spent warm. So everything here is built around one idea: get the milk cold quickly, and never let it warm up again. Five steps, and the cold holds through all of them.
Collected each morning from dairy farmers around Rewari and brought straight to the plant — a short route matters more than a long story.
Into our own ammonia-based chilling plant within the hour and held below 6°C. This is the step most small dairies skip, and the one you can taste.
Toned for Creamy Delight, skimmed for Lite and Dhaba Delight — so each variety sets to the exact body it is meant to have, batch after batch.
Live culture goes in, the matki is filled and sealed, and it is left completely undisturbed while it sets. Nothing is stirred afterwards — that is what keeps the set unbroken.
Straight from the cold room to the vehicle. It should reach you thick, cold and still sealed. Kept continuously below 6°C it is at its best for ten days from the date of packing.
Why it holds
Harshveda is the brand. Paavan Dairy is the company behind it, and every batch is made on our own floor in Rewari — our premises, our ammonia chilling plant, our licence. Nothing is job-worked out to anyone else.

Everything else can be copied. Anyone can print a label, and anyone can call something pure. What a buyer is actually paying for is the certainty that the matki opened this morning will be exactly like the one opened last week.
That is the whole business, and it is why the chilling plant gets the attention here instead of the marketing. Harshveda has been supplying dhabas, halwais, caterers, shops and families across Rewari and the districts around it on that basis — the same set, the same temperature, the same week as the last one.
